When tasting oysters, you'll discover a complex interplay of flavors and textures that can range from crisp and sharp to voluptuous and mild.

Flavor Profile

Oysters may exhibit any combination of the following flavor notes:

  • Iodine – Clean, oceanic minerality
  • Brininess – Salty sea essence
  • Sweetness – Delicate natural sugars
  • Nuttiness – Subtle, earthy undertones
  • Flint – Crisp, mineral sharpness
  • Metallic – Bright, steely notes

Texture

The mouthfeel of an oyster is equally important and can be:

Why Proper Storage Matters

Never accept oysters that have been stored in a tank.

This is critical to preserving the unique character of each oyster variety. When oysters are kept in artificial water systems, they lose their distinctive merroir and all begin to taste identical. A premium Perle Blanche stored in a tank will be indistinguishable from an entry-level Fine de Claire—a tragic loss of the nuances that make each variety special.

Proper Oyster Storage

To maintain peak freshness and flavor, oysters should be stored in the refrigerator at 4-6°C (39-43°F), covered with a damp cloth. When stored correctly, oysters can remain fresh for two weeks or longer, preserving their unique terroir and exceptional quality.
